Kala Mutton Recipe:
Ingredients:
1. Mutton 1 kg
2. Coconut whole piece( 1/4 th of a coconut)
3. Big onions - 5 Nos
4. Green chillis - 4 Nos
5. Coriander leaves - a bunch
6. Coriander powder - 2 tablespoon
7. Red chilli powder 1 Tablespoon
8. Turmeric powder - 1 teaspoon
9. Cinnamon stick 1 inch
10. Poppy seeds 1 teaspoon
11. Black pepper 1 teaspoon
12. Green Cardamom- 4 Nos
13. Cloves - 4 Nos
14. Curry leaves 1 sprig
15. Fresh Ginger 1 inch
16. Fresh Garlic 1 bulb ( approx 15 to 16 cloves of it)
17. Sunflower oil 3 tablespoon
18. One tomato
19. Salt
Process :
1. Cook the Mutton with few cloves of garlic and 1/4 inch of Ginger and whole spices untill it is semi done ( I do not use cooker). I normally add a pinch of turmeric while doing this.
2. Roast the coconut in open flame untill it is charred but do not burn it.
3. Grind it with 2 onions, coriander leaves, chillis, curry leaves, remaining Ginger and Garlic.
4. Take a heavy bottom vessel.
5. Pour Oil.
6. Saute the remaining onions in oil untill it is golden brown.Add diced tomato untill tomato is cooked. Approx 5 mins.
5. Add the paste and dry powders now and slow cook till you see oil on the sides of the bottom..the raw smell should be gone. Approx 10 mins.
6. Add the Mutton and Salt.
7. Slow cook for approx 30 mins.
8. Do not add extra water. The mutton broth should be enough.
9. After 30 mins keep roasting and the masala should kind of coat the mutton. Now optional sprinkle 0.5 teaspoon pepper powder before you close the cooking process.
Serve hot with rice or chapatti.
